'Cool as a cucumber' Salad

Try this instant-cooling & thirst-quenching salad made with 3 of my favorite therapeutic Summer foods:

🥒Cucumber: provides a cooling effect to the body; it’s moisturizing & replenishes electrolytes; helps you break down protein and clean intestines from toxins

🌱Mint: has a cooling after-effect; it reduces gas and inflammation in the digestive tract and clears all forms of stagnation in the blood, lymph and lungs

🌿Parsley: it allows for water excretion (reduces water retention) without the loss of electrolytes!

Note: Raw veggies are hard to digest so favor this recipe for lunch rather than dinner (our digestion is at its strongest mid-day!) and check in with how you’re feeling before making it.

Ingredients 

For the salad 

  • 6 Persian cucumbers, thinly sliced

  • 1 bunch fresh parsley, pick leaves off stems

  • 1 bunch fresh mint, pick leaves off stems

  • Handful cherry tomatoes, cut in half

  • Pinch pink Himalayan salt

  • Fresh black pepper

For the dressing 

  • 6 tbsp olive oil

  • ¼ cup rice vinegar

  • Salt & pepper

 

Steps 

  1. Once cucumbers are sliced, pad cucumber with paper towel to reduce released liquid.

  2. Toss cucumber slices with parsley, mint leaves and cherry tomatoes.

  3. Dress with vinegar and olive oil; season with salt and pepper.
