Ingredients 

  • 2 tbsp avocado oil (or any other)

  • 4 green onion, chopped into 1” pieces

  • 1/2 teaspoon asafoetida powder

  • 3” fresh ginger, cut into 4 pieces

  • 4 cups vegetable or bone broth

  • 1 cup water

  • 2 tablespoon soy sauce

  • 1 tablespoon miso paste

  • 1 block soft tofu, cut into small cubes

  • 2 packs ramen noodles

  • Fresh spinach, cilantro, sesame seeds, lime & green onions to garnish

  • Pink Himalayan salt & pepper 

 

Steps 

  1. Heat the avocado oil in a large pot on medium-high heat.

  2. Add the green onion, asafoetida and ginger to the pot and sauté for 2 minutes.

  3. Next add the broth, water, soy sauce, miso paste and bring to a boil, mixing well until everything is combined, then reduce heat to low, cover & let simmer for 10 minutes.

  4. Now add the spinach and cook for 2-3 minutes or until soft.

  5. Raise the heat to medium, then add the tofu, and ramen noodles letting cook for 2-3 minutes until the noodles are soft.

  6. Serve with chopped green onion, sesame seeds, lime wedges and fresh cilantro. Bon appetit!
